In the cold weather, comfort food that you can cook with your kids is a must, and nothing is
as delicious on a cold day as warm, creamy peanut butter muffins with sticky melted
chocolate inside…perfect for a mid-morning snack or an after-dinner treat.
What You Need:
1 cup all-purpose flour
1 cup whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup reduced-fat creamy peanut butter
2 tablespoons butter, softened
1 cup packed brown sugar
2 large eggs
3/4 cup milk
2 cups (12-oz. pkg.) Semi-Sweet Chocolate CHips
What To Do:
- PREHEAT oven to 375º F.
- LET the kids line the muffin tins with muffin cups or let them grease the pan.
- MEASURE, with the help of your children the all-purpose flour, whole-wheat flour, baking powder and salt in small bowl and let the children combine the mixture.
- MEASURE, with the help of your children the butter, peanut butter and brown sugar in large mixer bowl and mix until creamy. Add eggs and milk yourself and beat until smooth.
- ADD the flour mixture to peanut butter mixture; beat until just blended.
- HAVE the kids stir in the morsels.
- ALLOW the kids to spoon the batter into prepared cups, filling them 3/4 of the way full.
- BAKE for 18 to 20 minutes or until wooden pick inserted in center comes out slightly sticky.
- COOL in pans on wire racks for 5 minutes; remove to wire racks to cool completely.
- STORE in airtight containers.
