It’s getting chilly out there and we can’t think of any better way to warm up than a bit of cooking with the kids!
Create something that will warm you from the inside out like this hearty and healthy Winter Vegetable Soup!
Ingredients:
• 2 large onions
• 1/2 cup olive oil
• 2 garlic cloves, minced
• 8 large carrots
• 1 large butternut squash (peeled and seeded)
• 2 large potatoes
• 6 cups chicken stock
• Bag of green beans
• 3 courgettes
• 2 cups pasta (star shaped children’s whole wheat pasta)
• Coarse salt and freshly ground black pepper to taste
What to Do:
1. Get the kids to help peel (and seed) the butternut squash, potatoes and carrots.
2. With a knife, cut all the vegetables into 1 inch sections.
3. Cut the carrots, potatoes, butternut squash, and courgettes in to fun shapes for kids (hearts, stars,
diamonds, triangles ect.)
4. Put oil in a pan and sauté onions and minced garlic until soft
5. Add the carrots to the oil to soften
6. Transfer the sautéed vegetables into a large soup pot and add potatoes and chicken stock slowly.
7. When the potatoes are tender, add the green beans and courgette and let the brew simmer for 5 minutes,
help the kids to stir the soup carefully.
8. Add the pasta and continue to simmer until the pasta is soft.
9. Get the kids to season the soup with salt and pepper
