Let’s face it, there are a few things the Canadians know how to do better than us…amungst them, playing hockey, dealing with snow… and most importantly, knowing how to make a good pancake.
Pancakes are a great family breakfast, fun to make with kids and probably one of the best meals to hide a few of your kiddie’s 5 a day inside!
What You Will Need:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons sugar
2 large eggs, lightly beaten
3 cups buttermilk
4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle
Blueberries, Raspberries, Bananas…your choice
Canadian Maple Syrup
What To Do:
- Measure out the baking powder, baking soda, salt, and sugar and have the kids combine them and mix them togeather in a medium bowl.
- Let your little helpers try their hand at cracking the eggs in a seperate bowl (you may get a few pieces of shell, but the thrill for them is worth you picking out the pieces).
- Help them add the eggs, buttermilk, and 4 tablespoons butter to the bowl; whisk it togeather to combine (a fun part for kids). Batter should have small to medium lumps. (add fruit here)
- While the kids are stirring up the batter, on a medium heat, ensure your pan is hot by sprinkling a few drops of water on it. If the water bounces off, the pan is not hot enough.
- Using a pastry brush, brush remaining 1/2 teaspoon of butter onto the pan.
- Have the kids set the table while you using a ladle to scoop about a 1/2 cup of pancake batter in pools 2 inches away from one other on the pan.
- When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.
- Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.
The best pancakes I have ever tasted were made in a Canadian kitchen! I’m eager to try this recipe and see if it compares to my memories of that morning 20-some years ago.
These were outstanding, made them with blueberries this morning and served with pear “syrup” from a recent canning of pears project. This recipe is a keeper!
